Recipe - Vegan & Gluten Free Chocolate Banana Bread

Ingredients

175g Plain gluten free flour

40g Vegan & gluten free cocoa powder

1.5 tsp Gluten free baking powder

0.5 tsp Bicarbonate of soda

0.5 tsp Salt

100g Unrefinded dark muscavado sugar

120g Unrefined light muscavado sugar

300g ripe bananas (mashed)

70ml Vegetable oil

90ml Soya or almond milk

50g Vegan & gluten free chocolate buttons

Method

 Preheat the oven to 180 C/160 fan/ gas Mark 4

Grease and line a loaf tin with baking parchment

Sift together the flour, cocoa, baking powder, bicarbonate of soda and salt

In another bowl mix together the sugars, oil, mashed banana and milk until there are no lumps of sugar remaining

Combine the wet and dry ingredients together and mix until fully combined

Add the chocolate buttons (saving a few for the top to decorate if preferred)

Pour into your prepared loaf tin

Bake for 50 mins checking with a cake skewer

The mixture may need a few minutes longer in the oven if the skewer does not come away from the cake clean

Transfer to a baking tray and allow to cool.
